做法
1. | 前一天先準備好 美式烤肉醬 。保留1/3烤肉醬做為沾醬。 |
2. | 烤箱加熱到300°F(150°C)。豬排略微沖洗後擦乾再切成兩半。用刀去除背面的白膜(也可以不除,口感不同)。 |
3. | 將調味鹽和酒均勻地抹在豬排兩面。 |
4. | 工作檯上鋪上兩大錫箔紙,彼此重疊在一起。將肋排放置在錫箔紙中央,再覆蓋住兩張重疊的錫箔紙。將錫箔紙四邊往裡邊摺三摺,成為信封狀。 |
5. | 將整個錫箔包放烤箱烤2個小時。 |
6. | 取出錫箔包靜置10分鐘後再打開。烤箱溫度轉成上火最高溫。 |
7. | 烤盤鋪上錫箔紙後放上烤架。將肋排移轉到烤架上,骨頭面向上,並刷上適量的烤肉醬。進烤箱用上火烤6分鐘。 |
8. | 取出肋排,翻面後再刷上烤肉醬。再進烤箱用上火烤6分鐘。食用時可依照各人喜好刷上更多烤肉醬。 |
PROCEDURE
1. | Prepare the American Style BBQ Sauce the night before. Reserve 1/3 as dipping sauce. |
2. | Preheat the oven to 300°F(150°C). Rinse the ribs and dry with paper towels. Cut the ribs in half. Remove the silver membrane on the back if desired. |
3. | Evenly spread the seasoned salt and wine on both sides of the ribs. |
4. | Line two pieces of overlapped foil on the counter. Place the ribs in the center then cover them with another two pieces of overlapped foil. Fold in four edges to make an envelope pouch. |
5. | Place the pouch in the oven and roast for 2 hours. |
6. | Remove the pouch from the oven and let it sit for 10 minutes. Set the oven to the broil highest temperature. |
7. | Cover the bottom of a baking pan with foil then top with a grill rack. Transfer the ribs onto the rack, bone side up. Brush the ribs with BBQ sauce. Broil in the oven for 6 minutes. |
8. | Take out the ribs. Turn them over then brush more BBQ sauce. Broil for another 6 minutes. Serve with more BBQ sauce as desired. |
